I have been reading this cookbook like a novel.Kathleen is a great story teller and has realistic advice for the everyday person.If you are looking to lose 100 pounds in 2 days or build up to run a marathon this is not the right place. If instead you just want to eat healthier without remodeling your kitchen or your lifestyle I think you will find this book a good place for inspiration.
I have tried a number of the recipes already and they are very easy to put together - no impossible ingredients or specialty appliances.Oh yeah, and they taste good too!Now I have to start on the desert chapter.That's a real test!

The recipes are good, but the book is based in european and metric measurements.The weight charts are in stones not pounds so you need to know that there are 14 lbs. per stone to convert.The recipes are all in metric so all the measurements are in grams, ml's, etc. and need to be converted to cups, tablespoons, etc. which can be a hassle.

It's a no-brainer: Wanna be healthy? Go Vegan! But the truth is, it's very easy to eat an unhealthful vegan diet: Just load up on refined flour, sugar, oils, and heavily processed foods, and you'll be on the fast track to becoming an unhealthy vegan. Sadly, it's a mistake newbie vegans often make. Instead of embracing whole grains, fruits, vegetables, and legumes, many seek to replace their unhealthful omnivorous diets with vegan versions of their favorite junk foods.

Now don't get me wrong: I'm not saying that there isn't a time and place for veggie burgers, non-dairy milk beverages, yogurt, cheese, and ice cream. (Heaven knows I LOVE my coconut milk ice cream!) When I heard about Dr. Neal Barnard's latest book, The Get Healthy, Go Vegan Cookbook: 125 Easy and Delicious Recipes to Jump-Start Weight Loss and Help You Feel Great, it sounded like just the kind of book to help anyone quickly learn to achieve and maintain vibrant health through sound nutrition. Turn to the very first page of the book, and you'll read, "This book holds the culinary secrets to lifelong health." It's a promise that was fulfilled in the pages that followed.

The bulk of the book contains simple recipes for eating healthfully and enjoying every bite. But it also includes many thoughtful tools that will help you revolutionize your kitchen and your life, easily and effortlessly. You'll learn the science behind making health-promoting food choices and how to make your foods fit your health and weight-loss goals. You'll discover all the essentials for stocking a vegan kitchen and even find a recipe for making your own vegetable broth. (A staple for many wonderful dishes.)

Many recipes include a neat little "Did You Know" sidebar, with tasty tidbits of information about the dish or one of its ingredients. I picked up quite a few little culinary morsels from reading these boxes! For example, did you know that you can use your rice cooker to cook quinoa or that you can use chickpeas to make brownies? Nutritionals are thoughtfully provided for each recipe, and I noticed immediately that the recipes in this book are consistently low in fat and calories (even the desserts!) But after tasting several dishes, I quickly learned that they are also high in flavor!

A sampling of just a few of the recipes in this book, proved that although easy to prepare, they were equally palate-pleasing. Since in my mind, there are few foods more beautiful, sweet, rich, and juicy than fresh pineapple, the recipe for Tempeh Burgers with Pineapple Salsa was first to catch my attention. The tempeh is first bathed in a tasty ginger-citrus marinade, then pan-seared and topped with a delightfully fresh and fruity pineapple and mango salsa.

The recipe for mixed Vegetable Curry with Whole What Couscous blended together two of my favorite spices, coriander and cumin, with a medley of colorful vegetables. It was absolutely scrumptious!

Finally,tried the Udon Noodles with Shiitake and Button Mushrooms. What I really liked about this dish is that it was quite tasty either hot or cold. And it was so simple and quick to prepare, I didn't get overheated in my kitchen making this dish, even though it was a sweltering 96° the day I made it.

The Get Healthy, Go Vegan Cookbook is the perfect book for anyone who wants to eat more healthfully and deliciously and do so using simple, wholesome, widely available ingredients. It has become a cherished addition to my own collection of vegan cookbooks, and I will be buying many copies to give as gifts to family and friends.

I bought this book and "The Big GL + Diet Planner" by Fiona Hunter so I could start getting all the nutrition I possibly can from my food without feeling like I'm missing out on something, and without feeling guilty when eating some of my favorite foods. This diet helps level out your blood sugar levels which if unstable, can cause plenty of ailments-diabetes ofcourse being one of them-but can also cause mood swings and hunger cravings for more of the sugary, high-carb food you just ate!

This diet is more of a "slow" carb diet. The carbs that you eat are more slowly digested and so they sustain energy much longer and your body still has something to restock up on glucose in the muscle. (ok if my science is off a bit, just read the book:)

overall this is a great diet. For those who are on a low-carb diet, beware-this book does have a few places where it talks quite poorly of the Atkins diet, but it does also mention that without the Atkins thought on carbohydrates, nutritionists may have taken a bit longer to getting around to seeing the real effect carbs have on our blood sugar levels and health overall.

Typical of publications from the Prevention magazine staff, "Lose Weight the Smart Low-Carb Way" takes into consideration the latest medical research to create a diet that helps you lose weight the healthy way. Unlike other low-carb diets like Atkins, it doesn't go to extremes. It doesn't recommend you go into a state of ketosis (the body's alternate way of getting energy when it doesn't have enough carbs), but rather, it advocates somewhat reduced carbs and choosing less harmful types of carbs.
Authors Bettina Newman and David Joachim first explain the whys behind low-carb dieting. I found particularly useful a section which addresses common concerns about low-carb diets such as whether the diet will have a detrimental effect on cholesterol levels. Newman and Joachim don't load you down with a bunch of theory on your body's metabolic response to this or that. In fact, theory and diet plan make up only about 20% of the book, and some of the 20% are personal triumph stories and diet menus for various calorie ranges. The majority of the book is recipes.
They then outline the diet plan. Although they start out with the basic principles which can be used alone, for those who do better watching grams and calories, more specific diet recommendations involving calorie counts and grams are provided. A simple calculation based on how active you are tells you how many calories you should aim for. For those who can't make the switch the book encourages a slow weaning from our previous eating habits, as even making one little change like not eating sugar can cause weight loss. Sprinkled throughout the book (including in the recipes section, so make sure you go through every page) there are valuable tips such as how to recognize alternate names for sugar ("hidden" sugar).
The recipes so far range from good to very good. I've made about 4 or 5, and I plan to make all the ones I've tried so far again. They are very easy to make, so they fit into a busy lifestyle. One I prepared took much less time than I thought, so I had to take a break and play computer games with the extra time I had allotted for cooking dinner! Most use very common ingredients or have substitutions suggested for more exotic ingredients.
Since I already ate largely the way it says to when I got the book, I can't attest to losing so many pounds which were a direct effect of this book's diet. When I did switch to eating this way, however, a small amount of weight mysteriously disappeared without any effort (I'm about average weightwise, so I wouldn't expect much more), even though I was eating more oils. I also stopped snacking constantly, and my blood profile improved immensely.
Those of you who get this book as their first diet book will be lucky. I had to read several diet and health books, consider the information, and combine the best pointers from each to come up with essentially what "Lose Weight the Smart Low-Carb Way" advocates. If you want to lose weight or ever just eat healthier and are feel fad dieting is not for you, give this book a try. It is a reasonable diet plan which people can stick to, based on the latest medical research.

The book is inspiring, and I highly recommend it. What made this diet extremely easy for me (as a working mom with a nursing 1-year-old I have little time to cook) is that there's a company near me called Diet-to-Gothat delivers Mirkin Meals to my home. I feel like I could eat this wayforever. I have lots of energy, and after just two months of eatingMirkin-style, even my pre-pregnancy clothes are all loose on me. For peoplewho like whole grains, beans, veggies and fruit, this way of eating isextremely satisfying. The food is filling, and it seems like I'm getting avery nutritious diet every day, with enough protein, complex carbs,vitamins and minerals. I find that I really don't crave the fat, and that20 grams of fat per day is plenty. I think this type of diet also booststhe immune system, because even though others in my household (who are noton the diet) have been coming down with colds and viruses, I've stayedhealthy. Mirkin recommends exercise, but with so little time, the best Ican manage is to wear a pedometer and try to walk 10,000 steps each day.But, I've found that even walking an average of 4,000 steps seems to besufficient to cause weight loss on the Mirkin diet.

I received this cookbook and I was blown away by the variety of foods, from American, Italain, Mexican, etc. I have made a few of these dishes and they are absolutely delicious. The weight loss stories that are in the book are wonderful and very motivating. This is a great book for someone trying to lose weight or for a present. I highly recommend it.

While I'm neither a vegetarian or a vegan, I did want to have more vegetables in my low carb high protein diet. Rose Elliot did a great job on this book.The book is well balanced with readable information, very useful quick reference charts, menus, recipes, a few encouraging testimonies along the way. She does provide vegan alternatives to the lacto-vegetarian choices. And, best of all, it is an easy inexpensive way to lose weight on a low carb diet.

Her commonsense approach to recipes means you can make them with food typically on hand and quickly. Typically, most of the prep work can be done in a few minutes.And, you can expand on them as you learn the basic techniques.As I've worked my way through the book, one of my favorite recipes is her spaghetti squash using cream cheese with spices.

It literally only takes ten minutes to steam the squash in the microwave then fold in the cheese with spices.You can use already prepared cheese with herbs and spice mixes from the store.Or, you can use Philadelphia cream cheese and have your own ethnic flavors from Mexican to Indian, to Italian Garlic-Parmesan etc. And, you can use almost any steamed vegetable that has been thin sliced.It is a nice break from tomato sauces and there are never any leftovers.

This book is definitely a keeper!

After being a strict vegetarian for 15 years (and teaching cooking classes at a health foods complex), I was highly skeptical about Suzanne's system. But I'm a researcher, and I did my homework. Food combining is, indeed, an old and accepted theory of healthy eating. This is not an anti-carbo "diet"; it calls for the healthy food groups, only in different combinations so that insulin levels aren't spiked, thus causing the body to store calories as fat.
After reaching 50 and having a size 6 lean, mean machine, I suddenly put on matronly inches. Whose waistline was I seeing in the mirror anyway? Certainly not MINE! I couldn't fit into my clothes. Menopause wreaked havoc with my body. My low-fat vegetarianism didn't work at all for me anymore. All my workouts (Pilates, etc.) couldn't trim the excess inches I was continually adding. I began to feel desperate and out of control. So, as a last resort, I tried Somersizing.
I have known Suzanne was a fabulous cook ever since discovering an article about her culinary expertise 20 years ago. But these recipes and these sauces, in particular, are extraordinary! The latest book with its zucchini noodles, parmesan sauce, mozzarella marinara, and other delectable goodies is a triumph! I love to cook again! The simple wine reduction sauces are fabulous. The information about good fats is "freeing"! My husband and I are losing inches and eating tremendous food. My body is returning to its size 6 dimensions. I couldn't be more positive about this program. The information by Suzanne's endocrinologist is right on-target. It all comes together and finally makes sense. If you don't want to do the program, at least make the delectable foods! And if you DO want to follow the program, buen apetito and viva the weight loss! Also note: Suzanne's no-chemicals, no-preservatives sugar substitute, Somersweet, is due out in May. Another breakthrough for healthy cooks who have had to do without sugar for years. This woman is no dumb blonde. She's on the cutting edge!

Portobello Mushrooms with Bubbling Pesto
PRO/FATS AND VEGGIES -- LEVEL ONE

Serves 4
These mushrooms make a great appetizer or a delicious accompaniment for a summer meal alongside a steak. They work especially well if you are using your outdoor grill, but you can also broil them in the oven.

4 large portobello mushrooms
Olive oil for brushing
Salt and freshly ground black pepper
1 recipe Basil Pesto (p. 155)
4 tablespoons freshly grated Parmesan cheese

Trim the stems off the mushrooms. Brush mushrooms with olive oil and season lightly. Cook gill side down over medium coals or in the broiler for 5 minutes.

Turn the mushrooms over and spread a spoonful of pesto over the entire surface. Continue to cook for 10 minutes or until the mushrooms are very tender and the pesto is bubbling. Sprinkle the Parmesan on top of the pesto and return to broiler until cheese is melted and golden.Dawn's Deviled Eggs

Makes 10
My good friend Barry Manilow has a wonderful cook named Dawn. These are her delicious deviled eggs. Her original recipe includes avocado, which makes the filling green. Try it that way for Level Two.

5 hard-boiled eggs, halved lengthwise
1 tablespoon minced scallion, white and light green parts
1 large jalapeno pepper, seeded and minced
Juice from 1 lime
1 tablespoon mayonnaise
1/2 teaspoon kosher salt, or to taste
red chili flakes for garnish

Remove the yolks from the whites. Set the whites aside. Mash the yolks in a bowl with a fork. Add the scallion, jalapeno, lime juice, mayonnaise, and salt. Add more mayonnaise to reach desired consistency. Mash with a fork until blended. Using a teaspoon, carefully stuff whites with yolk mixture, mounding the tops.
For extra heat, garnish with red chili flakes.
For Level Two
Add 1 whole mashed avocado to the egg yolk mixture.From the Hardcover edition.

We bought the hard cover version of this wonderful book in 1989.We have worn it to a frazzle, with pages of our favorite recipes now falling out of the book.First, it scientifically lures you into a mind set of bettereating habits, and then it gives you excellent recipes by which to getthere.We highly recommend it!!!

I love cooking! But I don't like fast food, ready sauces, and dressings or canned food. Of course occasionally I use them but not in every dish. Cooking for Two should be a healthy cookbook but unfortunately its not. Almost every recipe contains `Kraft' sauces or salad dressings and half-and-half should be a common item in your refrigerator. Most of the recipes contained canned vegetable instead of fresh. I can't say that recipes are not good but be honest I haven't cooked one yet and I am cooking every day. If someone looking for a really healthy cook book, which inspires even your husband to look into your kitchen cupboard and experiment a dinner, go for this one: Weight Watchers Great Cooking Every Day. It's not a cooking for two but it is a way healthier and definitely more interesting.

This is Bryanna Clark Grogan's second cookbook, and just like the first one, this is also almost-no-fat vegan takes on holiday recipes from all over the world! Whereas the former reviewer has a point that you should be able to indulge in your holidays if only you just eat healthy the rest of the days, I must say that I do not find the recipes skimpy. Try out the different versions of Bryanna's creme-filled cake roll, and tell me if you think that's skimpy! The book provides tasty, elegant menus for St. Valentine's Day; Independence Day; Chinese New Year; Muslim, Jewish, and Buddhist holiday foods; Christmas menus; a Greek New Year's Eve; and more! Bryanna's barbecued seitan "ribs" with smoky barbecue sauce are incredibly yummy - her Vegetarian Irish stew with Guiness Stout served with Colcannon (mashed potatoes with kale) from her St. Patrick's Day menu are much tastier than the humble ingredients may suggest. Bryanna's Lasagne From The Garden is also a guaranteed hit, just as the holiday baking chapter. All in all, this is a very innovative cookbook which really proves that you don't have to feel you're restricted just because you've embarked on a vegetarian / vegan diet. If you've just recently discovered Bryanna's cooking, be sure you're in for a treat - do not hesitate to get her other books! You won't be disappointed.
