Although this book is already eight years old, it is a new favorite to me since I just bought it. Being a vegetarian, until I found this book, my experience with Cajun cooking has been limited to an occasional Red Beans and Rice. Now I am happily preparing Jambalaya, Courtbollion,and Gumbos that are vegan and low in fat.
Never having been pleased before with recipes for vegan cakes, I have to caution the reader that I haven't ventured into the dessert section at the back of the book. Some vegans may find the use of honey as a sweetener a problem and want to make substitutions.
The breakfasts, main dish and side dish recipes are wonderful, and have given me the courage to read non-vegetarian Cajun recipes with an eye as to how to adapt them to my diet.

My husband and I lived in Ardmore, Oklahoma for 2 years and we frequently ate at Veggies. The food at Veggies was nothing short of delicious. I honestly never had anything there I didn't like, and many of the recipes are (almost) "to die for."Mary has a way of making vegan food taste good for people who aren't used to it. Her Marinated Tofu, Cheezy Sauce, fajitas, and Mary's Marvelous Meatloaf are some of my favorites, to name just a few. Her pancakes, Spinach Lasagna, cashew gravy, and chicken-style seasoning are the best I've ever had. Whether you are an experienced vegan cook or trying vegan cooking for the first time, this cookbook will add many valuable and much-loved additions to your vegan recipe collection.

Anyone who is interested in incorporating whole grains and more veggies into their diet should have this cookbook in their kitchen! While their may be a few "exotic" ingredients to the newbies of macro/vegan cuisine, there are dozens and dozens of delicious recipes that incorporate whole grains, beans and soy products. Several of these items can be found at your local natural foods store or the health food section in your grocery store. Some of my favorites from this cookbook are the basic miso soup, chickenless salad, italian vegetable stew, brown rice & millet croquettes, quinoa salad, steamed spring rolls with citrus mustard sauce, temeph stronganoff, hearty sauteed greens with ginger, mushroom pate, sweet and sour cabbage with tart apples, pasta primavera, marinated vegetable and tofu salad, asian noodle salad with cashews, oat-raisin scones, olive nut bread, tarte tatin, and chocolate decadence brownies to name just a few. Christina does not use any refined sugars, white flour or dairy products in her recipes. Her delciious recipes require a shift in thinking from the SAD (Standard American Diet) to a natural, organic whole foods approach to enjoying food.This is a must have for any vegan or anyone just wishing to incorporate more vegetarian meals into their weekly diet.

...it is an informative book on healthy living. Besides numerous nutritious recipes for breakfast and brunch, baked goods, sauces, spreads, soups, main courses and other things, Burton provides advice for "Feeding Your Vegan Baby & Toddler" which is divided into age groups for 6-9 months, 9-12 months, 12-18 months, 18-24 months and 2+ years. In the section "Additional Notes for Feeding Baby" Burton discusses organic foods, prepackaged foods vs. home-made and food preparation tips.

Another helpful section that offers practical information is "Cooking Guides & Notes" where the author provides guides to cooking grains and beans and other "Cooking Notes." A comprehensive glossary is also useful.

Burton's support of hemp foods is a welcome addition to this recipe book and will hopefully encourage other cookbook authors to feature this nutritious food in their books. Not only does Burton include a section on "Hemp Foods," but she also mentions the importance of hemp in the Introduction.

"This is one of the few cookbooks you will see that features hemp products. Hemp seed nuts and nut butter provide complete protein and essential fatty acids that we can only get from our diet. Hemp seed oil is also rich in the essential fatty acids." (page 14)

Another interesting aspect of Burton's book involves the relatively small number of recipes that contain soy. Burton's reason for minimizing her use of soy is simple. "I suspect that many vegetarians and vegans rely a little too heavily on soy, and while I still include it in my family's diet, no one food should be consumed excessively." (page 14) Burton also includes numerous wheat-free recipes and recipes which feature a wheat-free option.

It's nice to see that vegan recipe books are becoming more popular. Vive le Vegan! is one of the better vegan cookbooks that I've seen as it not only offers a good selection of easy-to-make, nutritious meals and snacks, but it contains lots of other important information as well. Those who turned to vegetarianism due to a love of and respect for animals will want to get a copy of Burton's book and consider taking the next step to veganism. As Eric Marcus points out in the Foreword:

"Many people assume that concerns over cruelty can be addressed by becoming a lacto-ovo vegetarian, and buying free-range eggs and organic milk. Unfortunately, welfare standards for these foods are utterly lacking. And, just as troubling, these foods depend on slaughter every bit as much as their factory farmed counterparts. There is simply no such thing as animal agriculture without suffering and killing - the economics just don't allow it."

Let's get this straight - DO NOT buy this cookbook if you are a new vegan/vegetarian, and are looking for tasty meals that will make you forget your longing for meat. This cookbook falls into the stereotype of vegan cooking (bland, super-healthy tasting food that desperately needs spicing up). Buy "Urban Vegan" or "Moosewood Cooks for Health" instead.
That said, this is an excellent cookbook for people following the Mcdougall or Eat-to-live weight loss programs - over 100 of the recipes are Eat-to-live compatible. Nearly every recipe is low in fat, and Mccarty focuses a lot on sea vegetables like dulse and konbu, which add depth to the dishes. This book is great for weight loss, as the endless variations allow you to go months without repeating a recipe.
One final note: Mccarthy is extraordinarily bad at naming dishes. She persists in calling tofu "bean curd", seitan "wheat meat" and pudding "pudding-gel", so that even the most appetizing recipes sound gross. "Boiled Vegetable Salad"? Really?
Buy this book for what it is - a health food book. Don't expect to entertain, or be particularly entertained yourself by this book.

I just received my copy of Vegan Lunch Box after much anticipation. I was a fan of the blog that inspired the book and for some reason expected the format of the book to be similar, which is what appealed to me. Unfortunately, the entire book is laid out in a new way.

First of all, there are virtually no pictures (save for a special insert in the middle of the book), and none to accompany the recipes. There are very few set "menus" except in sections for special occasions and a few to kick off your thinking. The recipes are divided into apps, salads, soups, sandwiches, main courses, sides, breads, desserts and beverages, which is useful, though there are a few stand-by recipes in here I think she could have skipped for most of us- veggie dogs and baked beans for example, takes up an entire page.

The recipes go perhaps a bit beyond lunch- I won't be making soups or homemade beverages for my child's lunch box- but that's ok, it makes it a bit more versatile as a book for veggie families.

What I found helpful about the original blog was the creativity of how Jennifer, the author, put the meals together in the bento lunchboxes she created. The combinations of food items and what her child choose to eat and appreciated. It's not the recipes I struggle with, it's how to put together an appealing lunch for a vegetarian child (and one that her classmates will envy!).

That said, this is a useful book and a must have for parents to new vegetarians, and does have plenty to offer the veteran as well. I just wish they had followed the format of the blog a little bit more closely. The book does mention that all the original recipes are on the blog archive- but that's why I purchased the book, so I could have that information in a book format.

I know what you're thinking...do I really need ANOTHER vegan cookbook? Or, if you have none (yet), why would I purchase this book? Well, I was a tester for Tami and her recipes basically turned me into a gourmet chef. Easy to prepare with simple and no-fuss ingredients, the recipes in American Vegan Kitchen make any meal feel special and even got the meat-eating boyfriend's hearty endorsement. Favorites include the (baked!) onion rings, City Skillet tofu and potatoes, an amazing marinade for tofu skewers (coffee and liquid smoke-- need I say more? Sounds strange, but it's the closest I've had to a smoky, meaty taste in tofu), and the seitan. Now, I've tried at least 4 recipes for seitan but the ones in this book never cause any of the usual problems (gumminess, flavor, texture, what have you). The cinnamon flapjacks are great, and the yeasted waffles are my favorite of the many recipes I've tried. The roasted garlic pretzels are adorable and great for a party. The San Fran seitan wraps are great for quick weeknight meals, and taste much fancier than the ingredients would have you believe. The mustard mac and slaw turned me, a former slaw-hater (I couldn't even stand to look at the stuff) into someone who has to be restrained from making it weekly. Need I say more? Probably not. You'll love this book....and if not, well, something is wrong with your tastebuds.

In The Fiber For Life Cookbook, acclaimed natural foods author
Bryanna Clark Grogan's challenge is to make us believe that "fiber" and "gourmet" can be used in the same sentence. With all of the attention focused on protein, fats, and carbohydrates today, fiber has been virtually ignored (except for Weight Watcher's, which made the connection between fiberous foods and weight loss many years ago). Simply put, when the outside layer of seeds, fruits, legumes, etc., is stripped away in a refining process, dietary fiber is also discarded. Grogran explains that dietary fiber is responsible for balancing alkalinity and acidity, and for detoxifying chemicals in the gastrointestinal system that can cause diseases such as cancer. Without fiber in our diet, cancer-producing toxins are produced in the gut by bacteria that flourish in a fiber-deficient system. When this occurs, Grogan points out that constipationmay be a precursor to such life-threatening diseases as diverticulitis, large bowel cancer, colon cancer, breast cancer, gallstones, hiatus hernia, varicose veins, obesity, diabetes, and hemorrhoids, many of which do not occur in those consuming a high fiber diet.A chart of "Fiber Superstars" lists 50 foods containing at least 4.5 grams of fiber per serving (a cup of kidney beans contains a whopping 19.4 grams of fiber!). This informative chart is now on my fridge. Another chart lists the fiber and calorie content of over 100 name-brand foods. Sample menus, with suggestions for increasing fiber, are listed for meals and snacks. Over 150 pages are devoted to recipes for breakfast, breads, appetizer/snacks, salads/dressings/sauces, soups, beans, vegetables, grains, and desserts. I just bought this, thinking that it was a new book of recipes; imagine my surprise when I read inside the book that it was the same book Lacey and Gail released a couple of years ago. As much as I love the recipes I do not require them in duplicate.
The recipes are wonderful, but I am disappointed in the fact that no where in the online book description was it written that the books were the same, simply with different titles and covers.

It's a no-brainer: Wanna be healthy? Go Vegan! But the truth is, it's very easy to eat an unhealthful vegan diet: Just load up on refined flour, sugar, oils, and heavily processed foods, and you'll be on the fast track to becoming an unhealthy vegan. Sadly, it's a mistake newbie vegans often make. Instead of embracing whole grains, fruits, vegetables, and legumes, many seek to replace their unhealthful omnivorous diets with vegan versions of their favorite junk foods.

Now don't get me wrong: I'm not saying that there isn't a time and place for veggie burgers, non-dairy milk beverages, yogurt, cheese, and ice cream. (Heaven knows I LOVE my coconut milk ice cream!) But to eat more healthfully, we need to choose whole, organic fruits, vegetables, legumes, and grains as the centerpiece of our diets. And having a collection of plant-based recipes that offer us simple and delicious ways to prepare these foods is essential.

When I heard about Dr. Neal Barnard's latest book, The Get Healthy, Go Vegan Cookbook: 125 Easy and Delicious Recipes to Jump-Start Weight Loss and Help You Feel Great, it sounded like just the kind of book to help anyone quickly learn to achieve and maintain vibrant health through sound nutrition. Turn to the very first page of the book, and you'll read, "This book holds the culinary secrets to lifelong health." It's a promise that was fulfilled in the pages that followed.

The bulk of the book contains simple recipes for eating healthfully and enjoying every bite. But it also includes many thoughtful tools that will help you revolutionize your kitchen and your life, easily and effortlessly. You'll learn the science behind making health-promoting food choices and how to make your foods fit your health and weight-loss goals. You'll discover all the essentials for stocking a vegan kitchen and even find a recipe for making your own vegetable broth. (A staple for many wonderful dishes.)

Many recipes include a neat little "Did You Know" sidebar, with tasty tidbits of information about the dish or one of its ingredients. I picked up quite a few little culinary morsels from reading these boxes! For example, did you know that you can use your rice cooker to cook quinoa or that you can use chickpeas to make brownies? Nutritionals are thoughtfully provided for each recipe, and I noticed immediately that the recipes in this book are consistently low in fat and calories (even the desserts!) But after tasting several dishes, I quickly learned that they are also high in flavor!

A sampling of just a few of the recipes in this book, proved that although easy to prepare, they were equally palate-pleasing. Since in my mind, there are few foods more beautiful, sweet, rich, and juicy than fresh pineapple, the recipe for Tempeh Burgers with Pineapple Salsa was first to catch my attention. The tempeh is first bathed in a tasty ginger-citrus marinade, then pan-seared and topped with a delightfully fresh and fruity pineapple and mango salsa.

The recipe for mixed Vegetable Curry with Whole What Couscous blended together two of my favorite spices, coriander and cumin, with a medley of colorful vegetables. It was absolutely scrumptious!

Finally,tried the Udon Noodles with Shiitake and Button Mushrooms. What I really liked about this dish is that it was quite tasty either hot or cold. And it was so simple and quick to prepare, I didn't get overheated in my kitchen making this dish, even though it was a sweltering 96° the day I made it.

The Get Healthy, Go Vegan Cookbook is the perfect book for anyone who wants to eat more healthfully and deliciously and do so using simple, wholesome, widely available ingredients. It has become a cherished addition to my own collection of vegan cookbooks, and I will be buying many copies to give as gifts to family and friends.

If I had to only have one Vegan cookbook on my shelves, without a doubt, it would be this one. I am so impressed with the recipes I have tried from this book that I couldn't wait to write up a review. I have been watching the authors flickr stream for the taste testers posting images of the recipes in this book. They are all amazing!

I often suffer from lack of energy and the Banana Oat Morning Fuel recipe has now become my favorite. Not only does it keep me full for hours and hours, it tastes amazing and gives me more energy than any other breakfast I have ever had and it only takes a minute to prepare! It has a taste similar to a chocolate pudding but in a breakfast smoothie form.. what more could you want from a fast and easy breakfast? The Seitan en Croute is divine. This is the best seitan recipe I have ever made.. not only does it smell amazing while baking but it tastes like heaven! The author Joni has given this recipe on her blog, so if you would like to taste something before you buy it, try this! You won't be disappointed.

The only thing I could find to complain about this book (and it's hard believe me!) is the lack of photographs of the food inside. The authors however, have created a flickr group where you can find lots of images of recipes from this book. The back of the book is covered with snap shots of food from the book also.

My husband and I tried two recipes from this book...the Marinated Lentil Salad (pg 87) and the Roasted Green Beans with Slivered Almonds (pg 147).Both were excellent (note:while I am a vegetarian, my husband is definitely not, and he declared that these were both "make it again" recipes).In fact, the lentil salad was the best we've ever eaten.I'm going to try one of the other bean salads tomorrow.
I bought this book because it contained recipes that did not contain soy replacements, but instead relied on good, honest combinations of "real" ingredients.Don't get me wrong, there are a lot of wonderful soy substitutes out there, and we enjoy many of them (except for the soy cheese-substitutes, which are uniformly too strong and strange-tasting).But when I found myself using miso in a Mediterranean dish as a substitute for anchovies, I knew things had gone too far!I happened upon this book quite by accident, but by the time I finished reading the author's introduction, I knew it was a book for me.
I am also a weight watcher and this book contains nutritional information with each recipe (sufficient enough to calculate POINTS, if you are a member of WW).While the recipes are not all lowfat, many are -- simply because of the lack of dairy and meat.Some recipes seem to be a little heavy-handed with olives, olive oil, and nuts, but it will be easy to use a lighter hand when I make some of those dishes.
I heartily recommend this book to vegetarians of all types, and also to omnivores who want to incorporate a few meatless meals into their lifestyles.Even if you are not a vegan or a vegetarian, do not shy away from this title.You won't be disappointed.Way to go, Ms. Klein!I'm looking forward to your next vegetarian cookbook.

A passionate home cook that has been honing her cooking skills for the last 25 years, concentrating on Italian cooking for the last 10 years, writes this review.My favorite cookbooks are "The Professional Chef" by the Culinary Institute and "Culinary Artistry".With more than 500 cookbooks in my collection I am usually disappointed in my recent cookbook acquisitions.I am also very tough on Italian cookbooks in particular.

My husband and decided to try a vegan lifestyle about 3 months ago to reduce cholesterol.However, having to give up many of our favorite Italian foods was extremely difficult.Thankfully, as I was beginning to consider adding dairy back to our menu I found this book.It is a much better Italian cookbook than I expected it to be.

The book is outlined as follows:

Some of the basic recipes that the author includes are:Tofu Ricotta, Tofu Mascarpone, Tofu Ricotta Salata, Almond Ricotta, Soy Free Almond Ricotta Salata, Cashew Mascarpone, Tofu version of Heavy Cream, Vegetarian Burger, Vegetarian Hot Italian Sausage, Vegetarian Sweet Fennel Sausage, Seitan (Beef, Veal, Chicken, Pork, Burger, Hot Italian Sausage versions).She also includes a number of different variations for Polpetti (meatballs).

Many of the recipes included in this book are time consuming.However, this is no different than standard Italian homemade items.I don't recommend this book to people that have limited time or limited experience with Italian cooking.

Bottom line, this is a much better cookbook than I expected it to be.Can I tell it isn't meat and/or dairy?Absolutely I can tell the difference.The author's variations are satisfactory substitutes if the alternative is the unpleasant health effects that come with the regular consumption of high fat animal products.I would recommend this cookbook to anyone that loves Italian food and wants to cut back on his or her consumption of saturated fat.

This book is completely vegan and most recipes contain some whole grain ingredients and less refined sweeteners.

The first chapter - Getting Started - contains helpful information about baking without dairy products and using natural sweeteners. I especially liked the "Tips and Techniques for Making and Baking Desserts" and "A Baker's Dozen Secrets to Successful Desserts." I also like that Costigan recommends using organic ingredients.

The rest of the book is devoted to recipes. I particulary enjoyed the information, advice and tips at the beginning of each section.

- Great Good Cookies, Bars, and Little Bites
- Great Good Cobblers, Crisps, Biscuits, Muffins, and More
- Great Good Cakes, Fillings, Frostings, and Glazes
- Great Good Pies and Tarts
- Great Good Fruit, Beverages, Frozen Desserts, and Confections

For me, the most surprising thing about these recipes was how light they all were - even when I replaced the white sugar with whole wheat. You defintely would never guess the recipes were vegan or healthier than the typical white sugar/white flour, made with dairy desserts.

My only problem - and I have this critism with almost all dessert cookbooks - is that all the recipes were too sweet. I cut down the sweetener by 1/4 to 1/2 in almost everyone. But that is easily done and would not keep me from using this book.

Our favorite recipes were Currant Scones, Oat Sesame Squares, and Coconut Sorbet. Yum!
