This book is layed out as a series of chapters on particular topics such as making wine, vinegar, goat cheese, curing olives, making bread, etc. These chapters are then arranged as a description, with narrative, of how to make the food followed by recipes that *use the food*. So, for example, there is a chapter on making vinegar that can be summed up by: take old wine, get a mother of vinegar, let it hang out until done, (which is described) and bottle it. (with a little explanation of why you bottle). The recipes for the vinegar section then have various dressings that use vinegar.
This highlights a couple of things. First, that these foods are *simple* to make. There's nothing deep or complex about them. The foods will make themselves, if you just give a little support.
However, when I turn to the bread chapter, I am startled. The bread described uses commercial yeast, except for a very misleading section on sourdough. First, I would have thought that *this* book would emphasize sourdough bread which is easier, more fun, more tasty and, indeed, an increasingly "lost art".
I also would have thought that there would be a section on traditional preserving techniques, along the lines of the book "Keeping Foods Fresh" by Claude Aubert. The fact that it isn't highlights, I suspect, another underlying issue with the book. The imagined "good food" is western Mediterranean in origin. And the closer the better. It would have been interesting to consider some of the wonderful techniques used in Greece or Yugoslavia. That would get a range of fascinating things like pickled capers, cabbage and grape leaves, which would be very compatible with the spirit of the book and would have made a much more fascinating range.

I wish Amazon didn't consider 3 stars a negative review because this is not a negative review. I consider 3 stars average, and I give this nice book a slightly better than average grade of 3 1/2 stars.

Why not five stars? A few reasons. For instance, the pictures are great, but there isn't a photo of every recipe, a big mistake in a book for kids. And in many cases the picture of the dish is on the next page - not where the recipe starts. Also a mistake in a book for kids.

Which brings me to my big question: is this a book for kids or isn't it? I don't think the publishers could decide, either. It isn't written "down" to kids' level, and although the first "rule" listed is to not make everything complicated and just enjoy the process, the rest of the "rules" go on for two pages. Very adult-oriented.

But the colors are kid-appealing, and there's that "kids" in the title. And the author's darling daughter is in most photos, as are other kids.

So it's a book for kids with an adult cooking with them, I think.

About the recipes: nice, good, but nothing groundbreaking, unless you think adding crushed cornflakes to chocolate chip cookies makes them a whole new dessert.

Recommendation: A nice enough book, and very attractive. But only a 3 1/2 star rating, because nothing really distinguishes this book from the thousands of other cookbooks out there.

I haven't been lucky in finding a good book that was exclusively baking until I bought this book.It provides great recipes that you can use everyday, including recipes for breads, muffins, etc.Other cookbooks like Southern Living and Paula Deen provide good recipes but not many of them are baking.This book was the exact one that I was looking for to provide me with alterative sweets and treats that don't come from a box mix.It's a great baking reference book and I see it being a part of my go-to collection for many years to come.

I have baked whole wheat bread for decades and used everything from a Kitchen Aid Mixer, an automatic bread baker, a Bosch Mixer, and currently an Electrolux Mixer.You have to be committed enough to whole wheat bread baking to grind your own wheat and a own decent mixer. If you arewilling to make this much of an investment this book will tell you in detail how to make loaves of 100% whole wheat bread that will be as soft as store bought and have more flavor than you can imagine.I often likened whole wheat bread with fresh ground flour to eating a perfect vine ripened tomato versus a winter hot house variety. The taste is so much better you will never go back to white bread, not to mention the nutritional value.

The author describes all the different types of grains, how to use them, and little baking tricks like how to actually mix and knead the dough, how to determine gluten development, how to let the dough rise, how to determine baking time, etc.She also tells the effects of adding different ingredients like milk, eggs, dough enhancer, yeasts, gluten, etc. Even after all these years of bread baking I learned new things from this book.While I really bought this for my daughter, who is now hooked on baking her own bread for a family of seven, I am going to keep this as a handy reference and buy her another one.

I consider myself to be very picky regarding what cookbooks I own - I'llread any cookbook but I won't buy them for my reference shelf.Thiscookbook is a keeper!Sands deftly tells you not only the "how"of each recipe but the "why".I've read plenty of the"chemistry of baking" and other such books, but this is the firstthat truly explained certain principles of baking to me (like why yeastdoughs rise faster on humid days).There are even, in addition to thehundreds of recipes for baked goods, instructions on making your own playdough and paper-mache using King Arthur Flour!Don't be fooled intothinking this is a coffee table cookbook though - everything is black andwhite with no pictures (only a few line illustrations for things like thedifferent bread braiding techniques) - but you are bound to come back tothis cookbook again and again (in fact, it might be a good idea to buy acookbook cover as the pages are sure to get smudged with all your efforts).

Baking Basics tells you everything you ever wanted to know about baking-and then some. The first section has a list of pans, equipment and ingredients commonly used in baking. Ingredients are listed separately and some information is given for each ingredient such as the types of yeasts and how to successfully use them, the chocolates and how to melt them. Most of the ingredients are staples that you will already have in your cupboards; however, should there be an unusual ingredient a suggested substitution is given such as almond extract for Amaretto liqueur. More is told about ingredients as they are being used. At the end of the recipe are Baker's Notes and/or Secrets to Success, which give extra hints, techniques or substitutions.

At the beginning of each section are more easy-to-follow directions and guidance to help increase your success. Each recipe has step-by-step, clear and understandable directions. The recipes are familiar foods such as cinnamon-coated snickerdoodles, tangy, luscious lemon meringue pie and basic pizza. A few not so familiar but deceptively easy include Tourtiere, the French Canadian meat pie. I recommend the Savory Chicken Cobbler, a cross between a chicken pot pie and chicken and dumplings. This dish is light and easy, using a rotisserie chicken and frozen mixed vegetables. Make_ certain you have several people to share the 4-6 servings, or you will eat it all.

The Beyond part of the cookbook is "embellishments that transform a cake from basic to deluxe." Simple-to-do frostings, sauces, glazes and garnishes that add something special to desserts, taking them from so-so to spectacular.

Calorie count and nutritional values are not in the recipes, however, while you are tasting a piece of warm, fresh-from-the-oven, Grammy's apple pie or Mississippi Mud Cake, calories are not uppermost in your mind.

If you are a beginning cook, this cookbook would be the perfect place to start. Mrs. Sinclair takes your hand and leads you through, telling you what you need to know to complete a successful and delicious food. You can be tossing out scones and popovers like a trained chef. Do not go to your kitchen without this cookbook.

If you want to live simply but not blandly, this is the only bread book you need. Written in a gentle voice, this book encourages all to bake wholesome, delicious breads - sweet and savory - and love every bite. Now, I have many bread cookbooks and I do love all of them - from Elizabeth David to Amy to Laurel - but I cannot stress how much pure enjoyment and encouragement I've gotten from this modest tome. Reading his words and following his advice (which is open and even inexact at times) has always led me to greater independence and faith in my own instincts and never fails to turn out wonderful results!

If you are a seasoned bread baker, manager or owner of a small neighborhood bakery, this book is a must-have. It has hard to find information that will be extremely useful to you. This book is a valuable reference for professionals.

The first 30 pages is formal information on bread making techniques and ingredients in the professional bakery (e.g. base temperature calculations).

It has almost 50 recipes for specialty and flavored bread. These are extremely profitable, as they represent bread you can charge more for. If you are already doing standard breads, you should be able to do all the breads in this section without any additional difficulty. In addition, they will allow you to present good variety to your customers. The recipes are geared for about a dozen loaves, just about right for a neighborhood bakery.

It presents about 2 dozen different bread shapes that you can mostly apply to breads you are already making.

The second half of the book is devoted to bread sculpture, for those who feel artistic or who need a start for a professional competition.

What a fresh voice to discover in the cookbook aisle--I was so charmed that I paid full-price!(And the recipes are fabulous, too.)

As someone who once longed for an MFA of her own but is now in culinary school studying pastry arts, I couldn't possibly be more appreciative of Mr. Jackson's talents--unless he were to provide color commentary all day long while I baked. I will without doubt be purchasing his other efforts, both literary & culinary.

There aren't any secrets in Marilyn Moore's "The Wooden Spoon Bread Book."She has carefully and lovingly shared them all in an easy to follow, step by step format.Whether you have baked bread for years or are just starting to think about it, "The Wooden Spoon Bread Book" will take you where you want to go.I actually have the older edition from 1987 so I can't comment on the new illustrations.What I can say is this book has never been stored away or replaced since '87 and has been a staple in my kitchen from the beginning.A true sign (for me) that a recipe book is a classic is its physical condition.If the pages are crisp and clean, chances are it hasn't seen much use, probably for a good reason.My copy of WSBB is worn and the pages have swelled from constant use. For close to 18 years, this has been the only book I have ever turned to for bread baking.That has to say something.Two of my all time favorite recipes are Beignets (page 229) and Classic Croissants (page 236.) Both take some time (overnight rising) but are simple and lead to professional results.If you buy the book for these two alone, you have made an investment in culinary pleasure for a lifetime.I am not exaggerating, they ARE that good.
I don't think there is a loaf of bread that has not been included in this collection. There are the traditional yeast loaves, international varieties, sweet breads and snacks.Marilyn Moore has produced a classic encyclopedia you will refer to time after time.

This is the first of two books by the same name `The Bread Bible' written by Beth Hensperger and published by Chronicle Books in 1999. The second book with this title, written by Rose Levy Beranbaum and published by W. W. Norton & Company in 2003 I have reviewed earlier, before I discovered this title.
This occurrence is actually a rare good fortune, as it gives us a chance to compare two essays of exactly the same subject and pick that effort which does the better job on the subject. Both authors appear to have ample credentials for the chuzpah required to write a book with such a pretentious title. Ms. Hensperger has written five other books on bread baking and Ms. Beranbaum has written three other large, well received books on baking, two of which are also `bibles' on their topics.
Ms. Hensperger gives us 473 pages of text and 21 pages of index at $32.50 while Ms. Beranbaum gives us 608 pages of text and 21 pages of index for $35.00. Ms. Hensperger gives us 25 very useful introductory pages on equipment, flour, and general techniques. Ms. Beranbaum gives us 62 pages of what I considered to be a model of culinary writing on the ten essential steps to making bread. This is the first sign that Ms. Beranbaum is aiming at a much more sophisticated audience than Ms. Hensperger.
Ms. Hensperger gives us no color photographs or diagrams illustrating techniques. The few line drawings seem to be primarily for decoration. Ms. Beranbaum's book provides four sections of full color photographs of the baked products essayed in the book. She also provides many pages of expertly done line drawings illustrating baking techniques such as the `business letter fold', layering foccacia with herbs, and making sticky buns. Other line drawings give very good pictures of baking equipment.
Ms. Hensperger's Table of Contents with the name of each and every recipe spelled out is much more to my taste than Ms. Beranbaum's simple chapter headings. Fitting Ms. Hensperger's home baker orientation, she has two whole chapters devoted to using a food processor and a bread machine for bread recipes. Ms. Beranbaum discusses bread machines, finds useful things they can do, but ultimately keeps them on the sidelines due to their small capacity and the tendency of most to heat the dough, causing a too fast rise in the dough for optimum taste. Rose is certainly not a Luddite, as she makes extensive use ofthe KitchenAid stand mixer and its big brother the Hobart stand mixer. I prefer to not use bread machines. If you are comfortable with them, Ms. Hensperger may have more to offer you.
It is no surprise that both authors deal with brioche. Ms. Hensperger includes four recipes for brioche and three variations. All are embedded in a chapter on egg breads including Challah. Ms. Beranbaum devotes a whole chapter of 45 pages to brioche, including Challah, cinnamon buns, panettone, and a provocatively named `stud muffin'. Lots of variations on each recipe are given. As with all recipes, Ms. Beranbaum's approach is much more detailed and precise. The most obvious sign is that all of Rose's recipes give ingredients in both volume and weight in imperial and metric units. This feature alone would swing my choice in favor of Ms. Beranbaum's work. Another example of Rose's precision is that she specifies the high gluten brands of all-purpose flour rather than simple `all-purpose flour. I am constantly amazed at the variety in recipes for brioche. Like every other authoritative recipe, both recommend an overnight rise, but the two recipes start the sponge in much different ways, with Ms. Beranbaum using a much more finicky approach, being very careful to avoid exposing the yeast in the sponge to salt than Ms. Hensperger. When separating the dough to be put into molds, Ms. Hensperger is unconcerned about differences in size. Ms. Beranbaum is not compulsive about same sizes, but does recommend a scale to achieve uniform amounts of dough in the molds.
Neither author oversimplifies her procedures, but Rose Beranbaum consistently gives a much more professional instruction and a deeper understanding about what is going on along the way. Both have an ample amount of passion and love for what they are doing. If you are a home baker and can find Ms. Hensperger's book at a good discount, you will not go wrong. If you are a baking hobbyist or even aspiring to being a professional baker, then Ms. Beranbaum's book is the one you want. Both are excellent. Ms. Beranbaum and her publishers seem to have invested much more energy, money, and precision into their volume.
Judging from other reviewers comments, some errors have been detected in this book. The same is true of Ms Beranbaum's book. This issue is a wash and I have stopped holding a small number of minor errors like that against cookbooks.

I was apprehensive from the moment I saw this book. The author and the book description make it as if whoever goes into the Auzet bakery can come out with all sorts of secrets for breadmaking. Anyone who knows French bakers and patissiers, knows that they very rarely if ever give away their secrets, especially not to tourists that come for a visit! And true to my apprehensions I was dissappointed when I received this book. All the recipes,and they are not many, are with the straight method, ie using yeast not a sourdough or ferment, and they take from start to finish approximately two hours! Well this is just not enough time to develop the proper flavour of bread! I am a professional baker/patissier and these recipes are the ones I first learned in baking school. Mix the dough, let it double, shape it , proof it and bake it. Nice looking bland bread. Either Mr Auzet took the author for a ride or the author is taking us! There is no way to produce great tasting artisan bread using these methods. Now if you want to get this book here's a tip from me: Mix the dough as per the recipe but put only 1/2 to 2/3 the amount of yeast given, then put it in a shallow plastic container cover it with its cover and place it in the refrigerator overnight. This will give the yeast time to develop the flavour of the dough. In the morning take the dough out of the container and continue with the rest of the recipe method.
