1,001 Delicious Desserts for People with Diabetes Review

1,001 Delicious Desserts for People with Diabetes

I think the review by Kathy Anderson, who claimed that the recipes in this book have too many carbohydrates, is unfair and inaccurate. The lengthy, informative, and detailed introduction by Linda Eugene, RD, CDE, explains that "Most of the recipes do not exceed 40 grams of total carbohydrate per serving." Moreover, she discusses at length how diabetics must take a balanced and comprehensive approach to their diet, and taking a splurge on a dessert is always going to require an adjustment elsewhere in one's food intake. Last, she is very oncrete on one crucial point: "The key to including desserts in any meal plan is to focus on portion sizes.... The aim of this book is to offer dessert recipes that taste great. Serving sizes may be smaller, but your sweet tooth will be more satisfied with a small slice of something moist, creamy, and delicious that with a large slice of something dry, bitter, and tasteless." This is a book of desserts, after all--1,001 of them. I haven't made every recipe in this book, but I can vouch for the amazing variety of great recipes here--and for the fact that if you follow the book's directions regarding ingredients, meal planning, and portion control, this book can be a great complement to any diabetes-safe kitchen. Be smart, and enjoy.

I love this book! Most diabetic cookbooks I have read or tried to use have elements that I like, but this book has them all. It's pretty, using color pictures to show off the recipes, it's so informative and offers really great information, and most importantly, the food tastes good! You do not have to eat bland, falvorless food as a diabetic! I have even given this book to friends and family as a gift and they love it as much as I do.

While this cookbook is enjoyable reading, it is New York-centric and obviously written by a chef who has infinite ingredients at his command. Some ingredients not easily available in the hinterlands, and the cost of some recipes would be astounding, especially some of the fish and seafood dishes. For those who are addicted to reading cookbooks, it's an entertaining read. However, I didn't learn much about why the recipes are particularly applicable to diabetics, and I doubt that I will prepare many of the recipes.

Product Description:
The book food lovers with diabetes have been waiting for: a through-the-menu collection of 250 dishes to meet any craving, from hot and spicy to sweet and sour, from creamy to crunchy, from pastas to dessert. Written by Tom Valenti, one of America's Ten Best Chefs (Food & Wine) and a "clairvoyant in the kitchen" (Ruth Reichl, The New York Times)—and a diabetic—You Don't Have To Be Diabetic To Love This Cookbook is filled with recipes so delicious, so imaginative, so varied and enticing that it will turn the burden of following a diabetic regimen into a celebration of food.

In fact, this is food for everyone in the family to sit down and enjoy, with no penalty to the non-diabetics. Valenti employs innovations and techniques that are a signature of his cuisine—acid to brighten flavors, unexpected combinations of texture and temperature, turkey bacon as a foundation ingredient to add a haunting smoky-salty quality—and he never resorts to imitation products. Recipes include Asparagus and Mushroom Risotto; Chicken Chaat; Filet Mignon with Black and Green Peppercorn Sauce; Snapper Piccata; Grilled Duck Breast Paillard with Orange, Onion, and Mint; Lamb Sausage with Warm Potato Salad; Shrimp and Tomato Ravioli; Goat Cheese Cake; Banana Mousse; Miniature Pumpkin Pies.

Real flavors, real food, and finally, real pleasure, for America's 23.6 million diabetics.

This book provides me with meals that are as delicious as the resturants I frequent in Beverly Hills. It is different from other cookbooks in that, it is not typical Diabetic "American." You do not feel as if you arepreparing or eating a meal for diabetes. This cookbook is romantic, especially when you are planning passionate evenings and breakfasts.Another equally import ingrediant of this gourmet book are the educationalguidelines for explaining how to critical think through what your goals areand how to achieve them in a chapter by chapter "diabetes 101"support style. Mary Donkersloot wrote a very savy book for everyone to feelas if they are dinning in Beverly Hills or at the Chez Panisse!

One of the things I like about this cookbook is that it has recipes with different numbers of servings instead of just recipes for 2 or 4 or 6 people. Most are for 1, 2 or 4 servings and they tell you whether it is easy to double or half them for more or less people. There are many recipes to choose from and they are easy to follow. I have made several and they turned out great and I am not the most talented cook in the world LOL!
