I was diagnosed with Type II diabetes two and a half years ago. My first response was to research diet, nutrition and exercise as means of controlling my blood sugar. I've gone through dozens of books since then,and this is the first one I've found that actually pulls the informationtogether in a practical way that works for me.
There are hundreds ofdiabetic cookbooks and meal planners on the market.The problem is thatdifferent people will have different responses to certain combinations ofcarbs, fat, and protein in their diets. This book takes the time to explainwhy some diabetics may need to have as little as 30% of their dailycalories coming from carbohydrates, while others may need to have as muchas 60% of their daily calories from carbs.The author also talks about theeffect fiber has on glucose levels, and her system for balancing a diabeticdiet relies on counting carbohydrates, calories, and fiber rather thanexchanges.
Many other books provide menus and specific meal plans.Thebig problem with that approach, from my point of view, is that it can bevery difficult to apply those meal plans to a family situation. This bookfocuses on strategies rather than specific menus, which allows me tocontrol my diet more effectively even when I am in unexpected situations.

I think the review by Kathy Anderson, who claimed that the recipes in this book have too many carbohydrates, is unfair and inaccurate. The lengthy, informative, and detailed introduction by Linda Eugene, RD, CDE, explains that "Most of the recipes do not exceed 40 grams of total carbohydrate per serving." Moreover, she discusses at length how diabetics must take a balanced and comprehensive approach to their diet, and taking a splurge on a dessert is always going to require an adjustment elsewhere in one's food intake. Last, she is very oncrete on one crucial point: "The key to including desserts in any meal plan is to focus on portion sizes.... The aim of this book is to offer dessert recipes that taste great. Serving sizes may be smaller, but your sweet tooth will be more satisfied with a small slice of something moist, creamy, and delicious that with a large slice of something dry, bitter, and tasteless." This is a book of desserts, after all--1,001 of them. I haven't made every recipe in this book, but I can vouch for the amazing variety of great recipes here--and for the fact that if you follow the book's directions regarding ingredients, meal planning, and portion control, this book can be a great complement to any diabetes-safe kitchen. Be smart, and enjoy.
