Too many books written for people interested in starting their own business are written by professional writers who have no conception of just how deeply one's determination must be if they are to succeed. This book is not one of those.
Zachary Schat has done a great job explaining the pitfalls and rewards of owning your own bakery. I re-lived my early days in starting my bakery, Billy Boy's, that one day would venture before the world as Billy Bob's Pot Pies fast food franchise.
Although this book concentrates on his experience in bread-baking, it is general enough that it can be used in any sort of bakery and many deli's and restaurants.

Again, this is an excellent book that I will keep in my reference library.

This book is incredible. Since it has arrived, I have made three recipes and they all have been awesome.The recipes are easy to read and understand, and are organized so that no steps are omitted. I especially appreciate notations indicating that mistakes can be made in this step and what to do if it occurs.The Triple Threat Chocolate Chip Cookies are the best I've ever made or tasted.And the Omelette Kolache recipe is worth the price of the book if you ever have to makebreakfast for a buffet.Overall if you are new to pastry and want a word class book with fairly simple and uncomplicated recipes - this is it.What Rather's recipes miss from traditional pastry books that resemble art work, she makes up in wholesome goodness and taste that will make this a kitchen page turner.Great job!

Updates August '08: Just wanted to reiterate how successful these recipes are.Since my first review, I've baked several more cakes, a couple of tarts, and the brioche (of 3 versions I've tried, by far my favorite, better than the version in Baking with Julia).This book has a large section of bavarian style cakes, and I credit the authors for this becoming my very favorite type of cake.I've tried the passion fruit-lime cake and also the strawberry bavarian, and they came out so delicious, light, ethereal even.The lemon curd recipe is also delicious.This is my go-to baking book now, especially for cakes.The recipes really highlight quality, fresh ingredients, and they're never overly sweet or fussy.In addition to the weddings cakes (mentioned below), I've brought Tartine cakes to friends, family, and the office, and--assuming they are being honest--everyone says they are among the best they've had.I believe them because I agree, and I give full credit to the authors for that.

One note, however, is that the basic cake recipes produce more batter than needed to fill the pan.For me, this usually means a 6-inch cake for the freezer, which is a treat.

Usually I try not to review any book until I've cooked at least 3 recipes from it (which is often 3 more recipes than some of the highly-ranked cookbook reviewers around here try).Technically, I've only prepared 2 from this book: croissants and tres leches cake.However, that cake involved the recipe for a coconut chiffon cake, caramel, and vanilla pastry cream, in addition to the syrup and cream for assembling the final cake.That, coupled with the intricate nature of the croissant recipe, gives me enough evidence to say that this is an excellent baking book, a great addition to any baker's collection.

I've tried croissants before, struggled with the technique, and failed to approximate the taste of a good, buttery, proper croissant.I followed the detailed instructions here exactly, and I got exactly what I want.My French husband approved, and my mom and sister and I ate them up far too quickly.The dough wasn't easy, but it made a true croissant.I especially like Tartine's extra touch of baking them a little darker than most other recipes.

As for the tres leches cake, I'll say nothing as to its authenticity, since I wouldn't really know.As far as the recipe, though, it's utterly manageable: instructions and measurements are accurate and clear.The results: absolutely delicious, maybe the best non-chocolate cake I've made.The coconut chiffon is moist and tender, and the coconut syrup, caramel, and vanilla pastry cream make it so moist, flavorful, and satisfying.Another touch I liked was the small touch of lemon juice in the caramel.I haven't made it before, but I don't recall this as a standard addition in recipes I've seen.But it was definitely worth eating with a spoon.Probably a dozen or more people sampled this cake over the weekend, and they all loved it.

I look forward to trying the devil's food cake and the brioche, and I'm confident that they'll turn out as well as what I've made so far.

I also tried the devil's food cake recipe (Which includes recipes for the cake, caramel, ganache).It was a bit involved, but the directions were again very clear and spot on: I knew what to look for and even my first try came out great.I ended up making about 4 batches of the recipe and using it for my brother's grooms cake.Had raves from dozens of people.

Also, ended up using the tres leches chiffon cake for part of the brides cake, which also got tons of great feedback.

I look forward to working through this book even further.

Having had the delicious chocolate chip cookies from Tate's Bake Shop, I was thrilled to finally have the recipe! As soon as I recieved the book I made the cookies. Let me tell you, they are OK, but taste nothing like the cookies from the bakery.
Also, some ingredients are clearly left out of some of the recipes (ex pecan cookies don't list pecans as one of the ingredients).
I am giving 3 stars in the hopes that some of the other recipes fair better than the cookies.

If you're a novice baker, this isn't the book for you.Some of the recipes are a bit involved.You must, must make the Kranz Cake, even if it does demand an overnight rest of the dough...
Bear in mind this is a British book, so you'll need a set of scales as well as a Fahrenheit/Celsius conversion to make anything from the book (unless this edition is already converted - I got my copy in the UK).

I have a very large collection of bread-baking books, and my favorite book has long been the original "Amy's Bread" book (long out-of-print). When I had heard that a revised edition is coming out, I was ecstatic! Finally, new bakers will get to experience Amy's amazing breads. This book is a complete revision of the previous book, and I highly recommend getting it, whether or not you own the previous "Amy's Bread" book.

The style of this book is similar to the style of Amy's other book, "The Sweeter Side of Amy's Bread". The photographs by Aimee Herring are amazing. She is a talented photographer, making all of the breads look scrumptious. There are photographs of almost all products in the book. Additionally, there are photos of some shaping steps and also photographs of the bakery. The book is beautifully stylized; it is a joy to look at and to read from. In addition to the recipes and explanations, the book is studded with various stories of life at the bakery.

The recipes all have metric, imperial, and US measurements. This is such a huge plus! I find baking by metric weights far easier than every other method, and it is easy with this book. The other measurements are provided for those who find them more convenient. The recipes are all very clearly written. They are detailed and precise. Almost each recipe is accompanied by tips: ways to enhance the bread's flavor, flour suggestions, etc. Also, every recipe has a headnote explaining a bit about its origin.

The book begins with a detailed guide for bread baking, and also a clear and detailed sourdough section. I have used the method described in the book for making sourdough, and it does work. Then, there is a chapter about easy breads to get you started, containing some amazing and easy breads. Then there are other sections: whole-wheat breads, Rye breads, sourdough breads, semolina breads, sweet breads, etc. There is also a chapter on pizzas and flatbreads, and a chapter on sandwiches.

So far I have baked the whole-wheat bread with toasted walnuts and the whole-wheat bread with oats and pecans. Both were outstanding. The former has been my top bread for quite some time. I have tasted it at the bakery itself, and have since made it several times. It is just delicious. The second bread I made and brought to work. My colleagues finished the loaf within minutes. As one of my colleagues had said: "There is a serious problem with this bread; you cannot stop at just one slice." Now that the sourdough I had made (based on the method described in the book) is ripe, I have a batch of "Toy's Teddy Bread" proofing.

Finally, a quick comparison with the previous book: 9 recipes from the previous book do not appear in this book. Sadly, one of my favorites (Grainy Whole-Wheat and Seeds with Apricots, Prunes, and Raisins) has been omitted. These were replaced with 9 different recipes, including Amy's Brioche, The Picholine Olive Bread, and the Oragnic Miche, to name a few. Many of the recipes that appeared in the previous book were updated, so the recipes are a bit different. Some changes are quite small (the chocolate rolls now have dried cherries in them instead of peanut chips), others are quite large (different preferments, different hydrations, etc.).

All in all, if you had to select just one bread baking book, this is the one I recommend!
